COUNTRY CRUST BREAD
2 pkgs. Rapid Rise Yeast
5-7 c. Pillsbury's Bread Flour
2 eggs
1/2 c. sugar
1/4 c. oil
2 c. warm water
1 tbsp. salt
Pam or Mazola Spray

Sprinkle 2 packages yeast over the 2 cups warm water and let sit, undisturbed for 5 minutes. While yeast is dissolving, in a large bowl combine eggs, salt, sugar and oil. Add yeast and mix together well. Add 2 or 3 cups flour mixing well. Add enough more flour to dump onto a floured surface. Knead in more flour until soft and pliable, but do not force dough with flour to make it too dry. I use about 6 to 6 1/2 cups flour.

Place dough in an oiled bowl, covered to rise in a warm place until doubled. Punch down and divide into 3 loaves. Put in three loaf pans sprayed with Pam and let rise until doubled. Bake in preheated 325 degree oven about 20-25 minutes. Butter tops.

Using Rapid Rise Yeast - total preparation and baking time is about 3 hours.
