INDIAN SHRIMP CURRY 
1/2 c. minced onion
6 tbsp. butter
6 tbsp. flour
2 1/2 tsp. curry powder
1 1/2 tsp. salt
1 1/2 tsp. granulated sugar
1/4 tsp. powdered ginger
1 c. canned chicken broth
2 c. bottled milk or 1 c. evaporated milk and 1 c. water
2 1/2 lbs. cooked, fresh shrimp
1 tsp. lemon juice

Saute onion in the butter. Stir in flour, curry powder, salt, sugar and ginger. Add broth and milk and cook, stirring constantly until thickened. Add shrimp and lemon juice. Serve over rice.

CONDIMENTS: Chutney, shredded coconut, chopped almonds, chopped bacon.
