![]() 4 1/2 c. sifted flour 3 1/2 tsp. baking powder 8 tbsp. sugar 1/2 tsp. salt 3/4 lb. butter 4-5 tbsp. sour cream 4 egg yolks, slightly beaten To make crust, combine flour, baking powder, sugar and salt. Cut in butter. Combine sour cream and egg yolks and add to flour mixture. Knead lightly; form into ball and chill. FILLING: 3/4 c. sugar 8 apples, peeled & sliced Several spoons water 1/2 tsp. grated nutmeg 1 tsp. cinnamon 1 tsp. lemon rind Powdered sugar Preheat oven to 375°F. Make applesauce for filling. Cook apples with sugar and water until thickened. Add grated nutmeg, cinnamon and lemon rind. Cook. Divide dough into two parts and between two pieces of wax paper. Roll out thicker than for pie crust. Place one part of dough in well greased 8 1/2" x 13 1/2" pan. Cover with applesauce and cover with remaining dough. Seal edges. Brush top with egg whites. Bake at 375 degrees for 45 minutes or until golden. Cool then dust with powdered sugar. Cut into squares. |
