BELL PEPPER STEAK
1 1/2-2 lb. sirloin steak, cut into 1/2" thick
1 c. chopped onion
1 c. beef broth
1/2 tsp. salt
1/2 tsp. black pepper
1/4 c. oil
1 clove garlic, minced
3 tbsp. soy sauce
2 green bell pepper, cut in slices
2 tbsp. cornstarch
1/4 c. cold water
1 can stewed tomatoes

Grease skillet with 1/4 cup of oil. Cut steak in serving size of 4-6 (season with salt and pepper). Brown meat on both sides. Put meat in plate. Add onions and garlic to skillet and cook until tender, stir in soy sauce and broth. Cover and simmer for 10-15 minutes (until meat is tender). Add slice green bell pepper. Cover and simmer for 5 minutes.

Blend cornstarch in 1/4 cup cold water. Add to the mixture, stirring constantly until mixture thickens. Add meat back to mixture, let it cook for about 10 minutes. Add stewed tomatoes to boil for 3 minutes. Serve over rice or spaghetti. Makes 4-6 servings.
