STUFFED BELL PEPPERS 
4 lg. bell peppers, halved
2 lb. ground beef
1 c. cooked long grain rice
1/2 c. finely chopped onion
1 (15 oz.) can tomato sauce, reserving 1/2 for topping
Salt and pepper
Dash of Tabasco

Cut and clean bell peppers and parboil for 5-8 minutes. Mix ingredients with 1/2 can tomato sauce. Place drained pepper in casserole. Form balls with meat mixture and stuff each pepper using all the meat. Bake at 400 degrees for 35-45 minutes. May have to pour off the drippings. When the meat begins to brown, spoon on remaining tomato sauce and finish browning.

This recipe is actually pretty good if you substitute the ground beef with italian sausage.
