BELL PEPPER & GROUND BEEF
JAMBALAYA
 
3 lb. ground meat (pork or beef)
4 lg. onions
1/2 c. oil
8 lg. bell peppers
1 (8 oz.) can tomato sauce
salt, pepper & red pepper flakes
3 c. raw rice
6 c. water

Add ground meat and onions to oil and cook on medium fire until meat is no longer pink. Add half of bell peppers and tomato sauce and cook slowly for about 30 minutes. Add the rest of the peppers, season to taste; and cook until peppers are wilted. Add uncooked rice, water and simmer low until water has boiled out. Cover and steam until rice is done.

Serves 6-8.

My family liked this dish. I only used two lbs. of ground beef, about 1/4 cup of vegetable oil, six bell peppers, two onions, and two cups of raw rice. Pretty much 2/3 of the recipe amounts, except for the tomato sauce. I almost used an entire 15 oz. can. I used four cups water since I used only two cups of rice. My rice was still somewhat chewy so I added about half a can of beef consomme and put it back to simmer for a bit longer. Next time I will add some cheddar cheese to sprinkle on top.
