BELL PEPPER & GROUND BEEF JAMBALAYA | |
3 lb. ground meat (pork or beef) 4 lg. onions 1/2 c. oil 8 lg. bell peppers 1 (8 oz.) can tomato sauce salt, pepper & red pepper flakes 3 c. raw rice 6 c. water Add ground meat and onions to oil and cook on medium fire until meat is no longer pink. Add half of bell peppers and tomato sauce and cook slowly for about 30 minutes. Add the rest of the peppers, season to taste; and cook until peppers are wilted. Add uncooked rice, water and simmer low until water has boiled out. Cover and steam until rice is done. Serves 6-8. |
