HAMBURGER STUFFING FOR BELL
PEPPERS
 
2 tbsp. butter
1/2 lb. hamburger meat
1 tsp. salt
1 c. coarse bread crumbs
1 med. onion, chopped
2 fresh tomatoes
Dash of pepper
1/3 c. buttered crumbs

Saute onion, meat and peeled, cut tomatoes until onion is soft and meat is grayish in color. Add salt, pepper and coarse bread crumbs. Stuff previously prepared green peppers. Top with buttered crumbs. Bake at 350 degrees in oven for 25 to 30 minutes. (Stuffs 5 peppers.)

This was quick and easy and the flavor was great! Much better than the rice and tomato sauce versions. I did add 1/4 cup sliced mushrooms and 2 tbsp. beef broth to the stuffing. I served it with spiced tomato juice and fresh goat cheese.
