2 c. mashed potatoes, hot or cold
1 (8 oz.) pkg. cream cheese, room temperature
1 sm. onion, finely chopped
2 eggs
2 tbsp. flour
Salt & pepper to taste
1 can French fried onion rings

Put everything, but onion rings, into large mixer bowl. Beat until fluffy and well blended. Spoon into a greased 9 inch baking dish. Spread onion rings over top. Bake, uncovered at 300 degrees for 35 minutes.
