FLUFFY SWEET POTATOES | |
3 c. mashed sweet potatoes (1 40 oz. can makes approximately 3 c. mashed) 1 c. granulated sugar 1 tsp. vanilla 1/2 c. melted butter 2 eggs TOPPING: 1/2 c. brown sugar 1/2 c. nuts (pecans are good) 3 tbsp. flour 3 tbsp. butter (not melted) Mix first 5 ingredients. Put in buttered casserole. Mix topping to crumb consistency; sprinkle on top of potatoes. Bake at 350 degrees for 30 minutes. Do not cover. |
