FLUFFY POTATO CASSEROLE 
2 c. mashed potatoes (hot or cold)
1 lg. pkg. cream cheese
1 onion, chopped
2 eggs
2 tbsp. flour
Salt & pepper to taste
1 can French fried onions

In large mixing bowl, beat potatoes, cream cheese, onion, eggs and flour. Beat until light and fluffy. Top with French fried onion, after placing in a casserole dish. Bake, uncovered, for 35 minutes in moderate oven about 300 degrees.

This recipe can be made ahead of time and is an excellent way to use leftover potatoes.
