OLD-FASHIONED CANDIED YAMS 
3 medium yams
1 c. sugar
1 tbsp. nutmeg
1/4 stick butter
1 tsp. vanilla
pinch of salt
1-1/2 c. water

Peel and cut yams in quarters. Sprinkle with sugar and nutmeg; add butter. Add vanilla, salt and water. Cover and simmer over medium heat until liquid forms a syrup and yams are tender. Remove from heat and serve.
