STUFFED GREEN PEPPERS SOUTHWEST
STYLE
 
1 lb. ground beef (93/7%)
1 onion, chopped
2 cups Minute rice (white or brown)
5 medium round green peppers
3 cups Pace hot chunky salsa (or more, to taste)
shredded cheddar or Mozzarella cheese

Cut off tops of green peppers and remove core and seeds. Boil in large pot for 5 minutes for a softer green pepper. Or simply brush the outside of the green peppers with olive oil.

In a skillet, brown hamburger and onion.

Add uncooked rice and 2 cups of salsa.

Fill pepper cups with meat/rice mixture. Pour remaining cup of salsa over peppers. Cover with aluminum foil.

Bake in preheated 375°F oven for 25 to 30 minutes until peppers are tender.

Remove foil and sprinkle with shredded cheese. Bake for another 10 minutes, uncovered, until cheese is melted and bubbly.

I love stuffed green peppers! I like the combination of beef, rice and salsa. The only thing that could make it better is more cheddar cheese! Yum!
