FLUFFY POTATO CASSEROLE 
2 c. mashed potatoes (hot or cold)
1 (8 oz.) pkg. cream cheese (room temperature)
1 sm. onion, finely chopped
2 eggs
2 tbsp. flour
Salt and pepper to taste
1 can French fried onion rings

Put everything, except onion rings, into large mixer bowl. Beat until fluffy and well blended. Spoon into 9 inch baking dish. Spread onion rings over top. Bake uncovered at 300 degrees for 35 minutes.
