AUNT KAY'S PIE 
1/2 c. butter
1 c. sugar
4 eggs
1/4 c. heavy cream
1 tsp. grated lemon rind
1 tsp. lemon juice
1 tsp. vanilla
1 c. chopped nuts
1 c. seedless raisins (rinsed in hot water)
1 lg. unbaked pie shell

Cream butter and sugar. Add eggs one at a time saving 1 egg white. Add remaining ingredients. Beat remaining egg white until stiff. Fold into batter. Bake at 425 degrees for 10 to 12 minutes then at 300 degrees for 25 minutes, or until set.

I used to make this one at Christmas time when we were having a party. Makes a large and very rich pie. Cut it in small servings.
