KAY HANLON'S SOUTHERN FRIED
OYSTERS
 
1 doz. large size oysters
2 eggs
2 tbsp. cream
2 tbsp. flour
Dash of paprika, salt and pepper to taste
1 c. cracker meal
1 1/2 c. cooking oil, (10 to 12 inch fry pan)

Beat eggs and cream, stir in flour and seasonings and mix until smooth. Dip oysters in batter then in cracker meal, well coated. Fry in hot oil until golden brown about 15 minutes, drain them on paper towel and serve hot.

This is too long to cook oysters. They will get rubbery with over cooking. Five to seven minutes is has proven about right in my experience.

Awesome recipe! Needed a batter recipe and tweaked it just a bit by adding 2 tbsp half and half as it was a bit too thick for my purposes and added 2 tsp of old bay seasoning. Deep fried both my oysters and shrimp in batches after dredging through some Zatarains Fish fry. Only cooked oysters for 3-4 minutes in 350°F oil and the same for the shrimp. Carry over cooking ... "Done perfectly" according to my husband. Our favorite restaurant in New Orleans couldn't beat this one. SERIOUSLY ... I may never get to go back now ... only down side I can find.

Kay's Southern Fried Oysters-I'm not a cook but we had some oysters that needed to be eaten so I gave this a shot and they are tasty!
