CAJUN FRIED OYSTERS 
Raw oysters
Flour
Grease
Salt
Pepper
2 eggs

Pour grease into 6 inch deep frying pot. Let grease be heating. Beat eggs in a bowl with a fork (may need to add more eggs if cooking large quantity). Dip raw oyster, one at a time, into egg batter and then roll in flour. Drop oyster into frying pot. Fry over medium to high heat. When oysters float on top of grease and are a golden brown, dip out and place on paper towels to drain. Salt and pepper oyster.

Grew up in South Louisiana. Never heard of rolling oysters in flour. It was always cornmeal.
