BOILED MULLET 
Mullet - the more the better
Several lg. onions
2 or 3 lemons
1 or 2 datil peppers
2 or 3 stalks celery
2 or 3 carrots
Water
Salt and pepper to taste

Scale mullet - cut off heads and gut (ocean mullet). Put whole mullet, tail and all in a large pot. Cover mullet with water. Add lemons, cut in half, squeezed, peel and all. Add onions (lots), celery, datil pepper according to size of pot, salt and pepper to taste. Bring to boil, then simmer until meat almost falls from bone. Remove mullet from water - eat.
