PEAS, BUTTER BEANS, HAM HOCK AND
BABY OKRA
 
3 ham hocks
2 cup fresh black-eyed peas
2 cup fresh butter beans
3/4 cup whole okra
1/2 cup chopped onion
salt to taste
pepper to taste
1 tbsp. chili red pepper

In a large pot combine the ham hocks with enough water to cover. Bring to boil, reduce heat, cover and simmer for about 1 1/2 hours or until meat is tender. Pick over peas and beans; wash thoroughly. Stir in all except okra. Cover, reduce heat and simmer for about 1 hour and 15 minutes. Wash okra. Cut off tops. When peas and beans are tender, place okra on top. Cover and simmer 15 minutes. Add more water, salt and pepper if necessary.

Serves 6.
