CHEDDAR COD 
4 cod cutlets or steaks
2 tsp. lemon juice
Salt and pepper

SAUCE:

1 tbsp. butter
1 tbsp. flour
1/2 pt. or 1 c. skimmed milk
3 oz. Cheddar cheese, grated
1/2 tsp. mustard

Wash and dry cod. Place in a shallow oven-proof dish. Sprinkle with lemon juice, salt, and pepper. Place butter, flour, and milk in pan. Heat, whisking continuously, until sauce thickens. Continue cooking for 1 minute. Stir in cheese, mustard, salt, and pepper to taste. Pour sauce over the cod and cook 30 minutes at 350 degrees. Garnish with parsley and tomato wedges.
