APRICOT NUT BREAD 
1 c. dried apricots, chopped
1 c. boiling water
1 c. sugar
1/2 c. butter
1 egg
2 c. sifted flour
1/4 tsp. salt
1 tsp. baking soda
1 c. walnuts, chopped
Cream cheese (optional spread)

Pour boiling water over cut-up apricots, then allow to cool. Preheat oven to 325 degrees. Cream together butter and sugar and beat in the egg.

Sift together the flour, salt, and baking soda, and gradually add to the creamed mixture. Stir in the chopped walnuts and the apricots in their water. Pour in a 9x3x5 inch loaf pan and bake for 1 1/2 hours. (Check at 1 1/4 hours.)

Serve warm or cold, with or without cream cheese. Serves 8-12.
