EASY BLUEBERRY MUFFINS 
1/4 c. butter
1/4 c. shortening (or total of 1/2 c. butter)
1/2 c. sugar
1 egg
1 c. milk
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1 (8 oz.) pkg. frozen blueberries, or 1 c. fresh blueberries

Preheat oven to 400 degrees. Blend together butter, shortening, sugar, egg, and milk. In separate bowl, mix together flour, baking powder, and salt. Then blend together the two mixtures, but not too much. Dough should be tunnely. Fold in blueberries. Bake 30 minutes or less.

Great recipe, but you have to DOUBLE the SUGAR. The second time I made them with one cup of sugar, they were delicious. Also, the cook time in my oven was 15-18 minutes.

I dropped the blueberries and added 1 c of cranberries and 1 c chopped walnuts and made best cranberry muffins ever! The blueberry muffins with the vanilla and not doubling sugar was excellent.

To make a lower fat version I substituted smart balance for the butter and shortening, egg whites for whole egg and 1/2 cup whole wheat flour. I also added 1/4 tsp. of vanilla. My teen had two servings!

This recipe was delicious! But the next time I make it I would double the sugar. This recipe also would work with 1 cup of any other fruit to substitute the blueberries.

Very good recipe. I did double the sugar and added 1 tsp vanilla. My oven time was 18-20 minutes. They were moist and enjoyed by the whole family.

I love this recipe. I add chocolate chips, lemon zest, vanilla, top with a little brown sugar and keep the sugar at 1/2 cup. I only used 1/2 stick of butter and they are great. Today I tried Cranberries cut in half, lemon zest, white chocolate chips, vanilla. Excellent. You really don't have to increase the sugar if you put a little brown sugar on top and it gets golden brown.
