NUT-APRICOT SQUARES 
1/2 c. butter
1/2 c. sugar
1 tsp. grated lemon peel
2 egg yolks (reserve whites)
1 c. sifted all-purpose flour
1 tsp. salt
1/4 tsp. baking soda
1 lb. apricot jam (16 oz. jar)
1/4 c. sugar
1 c. grated nuts
Confectioners sugar

Cream until fluffy first 3 ingredients. Add egg yolks, beating well after each. Sift together flour, salt, and baking soda. Blend dry ingredients into creamed mixture and spread into a greased shallow pan 12x8. Cover batter with 1 jar (1 pound) apricot jam.

Beat egg whites until stiff but not dry. Gradually add 1/4 cup sugar and continue to beat until egg whites form into peaks. Fold in 1 cup grated nuts. Spread nut meringue over jam, keeping meringue fluffy. Bake in 350 degree oven 45 minutes or until firm. Cool slightly. Cut into strips and sprinkle with confectioners sugar.
