APRICOT SHORTBREAD SQUARES 
2 sticks butter, softened
1 c. sugar
2 eggs
Pinch of salt in flour
2 c. all-purpose flour
1 (12 oz.) jar apricot preserves
1/2 c. sliced almonds
Confectioners' sugar for garnish

With electric mixer, blend soft butter, sugar, and eggs. Add flour and blend. Spread half of mixture in 9x13 inch greased pan. Spread preserves over mixture and cover all with the nuts. Distribute other half of mixture over preserves and nuts. Bake at 350 degrees until golden, about 35-40 minutes.

These easy squares are a delightful treat and especially popular over the holidays.
