CONNIE'S SUMMER SALAD 
1 large English cucumber, peeled and diced
1 cup snow peas, halved
1 small red onion, thinly sliced
1 (20 oz.) can chunk pineapple, drained
1 (4 oz.) can mandarin oranges, drained
1/2 cup golden raisins
1/2 cup shredded coconut flakes
lettuce leaves (iceberg or romaine)

HOMEMADE DRESSING:

1/3 cup seasoned rice vinegar
2 tbsp. vegetable oil
1 tbsp. soy sauce

Place cucumber, snow peas, onion, pineapple, mandarin oranges, raisins and coconut flakes in a bowl.

Put dressing ingredients in a jar or cruet and shake well to combine. Pour dressing over salad and toss lightly to coat.

Let salad rest 1/2 hour to marinate. Serve on lettuce leaves.
