APRICOT NUT BREAD 
2 c. sifted all purpose flour
3/4 c. sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 c. chopped dried apricots
Orange or apricot marmalade; optional
1/2 c. chopped nuts
1 beaten egg
3/4 c. milk
2 tbsp. salad oil

Sift dry ingredients into a mixing bowl. Stir in apricots and nuts. Combine egg, milk, and oil; add to dry ingredients, stirring only until moistened. Pour into a greased 9 x 5 inch loaf pan and bake in a moderate oven at 350 degrees for 50 minutes or until done. Remove from pan and place on a cookie sheet; spread top with marmalade and return to oven for about 1 minute or until glazed. Cool thoroughly before slicing.

NOTE: Use chopped cranberries instead of apricots, if desired. Slice into thin slices. Spread with softened cream cheese or butter. May be frozen.
