CARIBBEAN BLACKENED TILAPIA
FILLETS
 
2 tbsp. apple pie spice
3/4 tsp. dried thyme
1/2 tsp. garlic powder
1/2 tsp. cayenne pepper
2 tbsp. canola oil
1 1/2 lbs tilapia fillets, 1/2"-thick

Heat skillet over medium high heat.

In a small bowl, stir together apple pie spice, thyme, garlic powder, and cayenne pepper. Brush oil over both sides of fillets. Sprinkle fillets with spice mix, press in lightly to form coating. Add fillets to skillet, cook for 4-6 minutes, turning once, or until fish begins to flake easily, and spices are well-browned, but not burned.

Tilapia is a farm-raised fish, which takes some of the pressure off our wild fish populations. But the first few times I tried Tilapia, I wasn't that fond of it. The texture was almost creamy. I like a firm fish. So I've been trying different recipes so I can start using it. This recipe is awsome! The apple pie spice is cinnamin, nutmeg and all spice. It sounds weird, but believe me, it works great. Didn't change a thing. It's a keeper for sure.
