CARIBBEAN BANANA BREAD | |
1/4 c. milk 1/2 c. raisins 2 lg. ripe bananas 1 tbsp. sugar 1 stick butter 1/2 c. packed brown sugar 1 egg 2 c. flour 3 tsp. baking powder 1/4 tsp. allspice 1/4 tsp. nutmeg Preheat oven to 350 degrees. Grease large loaf pan. In bowl, mash bananas with the white sugar to make 1 cupful. Cream butter and brown sugar in a large bowl. Add the egg and blend it in well. Mix the flour, baking powder, allspice and nutmeg together and add it to the mixture in 2 batches, blending after each addition. Thoroughly mix in the bananas and the milk. Stir in the raisins. Spoon the mixture into prepared pan. Bake 45-55 minutes. |
