QUICK WHOLE GRAIN BANANA BREAD
This recipe uses a lot of whole grains, but it will turn out excellently if you use all-purpose flour in place of any or all of the whole grains. Also, any of the whole grains are interchangeable with any of the other whole grains in the recipe.

1/2 c. butter
1 c. sugar
2 eggs, slightly beaten
1 c. mashed banana (3 med.)
1 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/4 c. whole wheat flour
1/4 c. oat bran
1/4 c. wheat bran
1/4 c. wheat germ
1/3 c. hot water
1/2 c. chopped walnuts

Preheat oven to 325 degrees. Melt butter. Blend in sugar. Mix in beaten eggs and bananas, blending until smooth. Sift flour, salt and soda. Stir in whole wheat flour, brans and wheat germ. Add alternately with hot water. Stir in nuts. Bake in a loaf pan 1 hour and 10 minutes.

Great recipe, love all the healthy grains. I've made it loads of times now. Some suggestions - it's a bit sweet and naughty, and recipe works fine with 3/4 the amount of sugar. You can even halve the amount of sugar (but goes slightly crumbly). Recipe also works with oil instead of butter - use 3/4 the amount of butter called for. Sunflower and pumpkin seeds work great instead of nuts if you don't have nuts to hand.
