“BROWN BETTY PUDDING” IS IN:

BROWN BETTY PUDDING 
1 cup bread crumbs (unseasoned)
2 cups apples, peeled and cored and sliced
tablespoon lemon juice, freshly squeezed
3/4 cup sugar (or to taste)
2 tablespoons butter
1/4 teaspoon cinnamon
1/4 teaspoon ground ginger
pinch of nutmeg
pinch of ground cloves

In a saucepan, steam apple slices in lemon juice and 3 tablespoons of water, covered, over medium low heat until the apples are fork tender. Add a few drops of water, if needed as the apples cook.

Combine unseasoned bread crumbs with the spices, mixing thoroughly.

Brush or spray a casserole dish with vegetable oil. Layer apples evenly along the bottom of dish. Spread a layer of spiced bread crumbs; sprinkle with sugar and dot with butter.

Continue making layers in this way until all the apples are used, ending with a layer of bread crumbs and a few extra dots of butter for the top. Sprinkle with a tablespoon of the apple cooking liquid, if any remains.

Bake in a 350°F oven and bake for about 45 minutes, or until the top is nicely browned.

Serve warm, with hard sauce or whipped cream.
