SQUASH CASSEROLE 
6 yellow squash, sliced
1/4 tsp. pepper
1/2 tsp. salt
1 egg, beaten
1/2 c. rich milk
1 can mushroom soup
1/4 c. chopped bell pepper
1/4 c. chopped onion
8 Saltine crackers, crushed
1 c. grated cheese

Boil squash until tender, drain. Combine all ingredients except crackers and 2 tablespoons cheese. Pour into buttered casserole dish. Combine 2 tablespoons cheese and crackers, sprinkle on top. Bake for 30 minutes at 350 degrees.
