MOM'S SQUASH CASSEROLE 
1 1/2 c. cooked squash
2 tbsp. parsley flakes
3 tbsp. butter
1 c. cracker crumbs (saltines)
2 eggs, beaten
1/4 tsp. red pepper
1 to 3 tbsp. chopped pimento
1 c. grated cheese (cheddar)
1 c. scalded milk
Salt and pepper

Combine squash, onion, parsley, pimento and butter. Add cheese and crackers; mix, add milk and eggs. Cook 40 minutes at 350 degrees.
