ORIENTAL CHICKEN SALAD 
4 oz. mai fun noodles (optional)
5 to 6 chicken breasts
1/2 tsp. ginger
1 head med. lettuce
1/4 head bok choy
4 green onions
1 c. bean sprouts
1 c. chopped celery
1/2 c. toasted almonds
1/4 c. sesame seeds
1 can mandarin oranges or pineapple chunks (optional)

Cook chicken and ginger together with a little water until done. Mix all together.

DRESSING:

1/2 c. salad oil
4 tbsp. sugar
2 tbsp. soy sauce
2 tsp. salt (optional)
1/4 tsp. pepper
4 tbsp. white rice vinegar
1/4 tsp. ginger

Put all ingredients in saucepan. Bring to boil, cool before using.
