CANDIED SWEET POTATOES WITH
MARSHMALLOWS
 
1/2 c. butter
6 sweet potatoes, cooked, peeled and sliced
1 tsp. baking powder
1 tsp. vanilla
1 tsp. ground cinnamon
2 eggs
3/4 c. sugar
3/4 c. buttermilk
3/4 c. pecans (optional)
mini marshmallows

Boil potatoes; drain and transfer to bowl of an electric mixer. Add butter to hot potatoes.

Add baking powder, vanilla, cinnamon, eggs, sugar, and buttermilk. Whip until smooth.

Stir in pecans, if desired.

Place mixture in a buttered 2-quart casserole and bake at 350°F for 30 minutes.

Top with a 1/2 inch layer of marshmallows during the last 10 minutes of cooking. Run briefly under broiler, if needed, to make the marshmallows melt.

Serves 6.
