SIMPLE CINNAMON CANDIED YAMS 
2 (15 oz. ea.) cans cut sweet potatoes (yams)
1/4 cup (1/2 stick) butter
1/2 cup brown sugar (light or dark)
1 tsp. ground cinnamon (more or less, to taste)
15 to 20 large marshmallows

Preheat oven to 325°F.

Melt butter in small saucepan over medium heat. Add brown sugar and stir until melted and bubbly. Stir in cinnamon.

Drain liquid from sweet potatoes and place in casserole dish. Pour melted butter/sugar mixture over potatoes and place in oven uncovered for 20 minutes. Stir occasionally to cover all potatoes.

Cover with marshmallows. Cook and additional 10 minutes for marshmallows to melt. Then put oven on broil for 2 to 3 minutes or until marshmallows are lightly browned.

Note: Watch closely while broiling, the marshmallows burn quickly!

Remove from oven and serve.
