CANDIED YAMS (DELICIOUS) | |
4 yams or sweet potatoes, unpeeled 1 tsp. salt 1/2 c. butter 1/2 c. brown sugar, packed 1 tbsp. orange peel, grated 1/4 c. orange juice or water 1/8 tsp. ground cinnamon Generous dash of pepper 1/2 c. walnuts, coarsely chopped (optional) In 4 quart saucepan, place yams and salt. Add water to cover. Over high heat, heat to boiling. Reduce heat to low. Cover; simmer 30 to 40 minutes until yams are fork-tender. Peel and quarter yams. In same saucepan, combine butter, brown sugar, orange peel, orange juice, cinnamon and pepper. Heat to boiling. Add yams and nuts, heat until yams are glazed, spooning sauce over to coat. 6 servings. |
