APPLE MINT MOUSSE 
2 c. apple sauce
1/2 tsp. peppermint extract
1/2 c. sugar
1 tsp. ground cinnamon
1/8 tsp. ground mace
1 tbsp. lemon juice
Green food coloring
1 c. heavy cream

Whip cream; set aside. Combine sugar, cinnamon, mace. Add to apple sauce and stir until sugar is dissolved. Add lemon juice, peppermint extract and enough food coloring to tint mixture green.

Fold in whipped cream. Spoon into an ice tray and freeze for two hours, or until firm enough to serve. Serves 6.
