MINT APPLE CRISP 
1 tbsp. butter, softened
1 c. sugar
1 c. flour
1/2 tsp. double acting baking powder
1 egg
1 tbsp. dried mint leaves
1 tbsp. ground cinnamon
6 med. size tart apples, peeled, quartered, cut in 1/4" slices

A nice recipe to make with children.

Preheat the oven to 350 degrees. Brush bottom and sides of 8"x8"x2" baking pan with softened butter.

Combine the sugar, flour and baking powder and sift them into a mixing bowl. Make a well in the center and drop in the egg. Mix together with two table knives until the flour has thoroughly absorbed the egg.

In large bowl, stir mint leaves and cinnamon together. Add the apples and toss them until slices are evenly coated on all sides. Arrange the slices in baking dish and scatter the flour mixture over them, spreading and pressing it gently into a smooth layer to cover the apples completely.

Bake in the middle of the oven for 45 minutes or until the topping is crusty. Remove from oven. Cover tightly with foil and set aside to cool. Serve at room temperature. Serves 4 to 6 people.
