MINT-APPLE JELLY 
4 c. canned apple juice
1 (1 3/4 oz.) pkg. powdered fruit pectin
6 drops green food coloring
1 c. fresh mint leaves
4 1/2 c. sugar

Combine juice, pectin, food coloring and leaves in large pot. Bring to hard boil. Stir in sugar. Bring back to hard boil 1 minute. Remove from heat. Remove leaves. Pour into jars. Seal. 6 - 1/2 pints.
