JOSH AND KIM'S TORTILLA CHIP
FAVORITE
 
1/2 lb. turkey burger meat (or hamburger will do)
1/2 small onion, chopped
1 (15 oz.) can Mexican style chili beans
1 (15 oz.) can stewed tomatoes with chilies
1/2 (15 oz.) can sweet corn, drained
hot sauce, to taste
2 tsp. cumin
2 tsp. taco seasoning
dash of pepper
dash of red pepper
1 1/2 cups uncooked rice
shredded cheddar cheese
tortilla chips or whole tortillas

Cook meat in skillet until brown with onion.

Mix chili beans, stewed tomatoes, chilies and corn together in a saucepan on medium heat. Season with hot sauce, cumin, taco seasoning, pepper and red pepper.

Boil water and prepare rice according to package directions (you may want to add a dash of cumin and hot sauce to rice once cooked).

TO SERVE:

Lay tortilla chips onto your plate, add rice and bean mixture. Top with cheese... or just dip your chips in.

Another option is eating this in a tortilla. Heat Tortilla's on medium heat in a skillet turning every 20 seconds. Put rice and bean mixture in tortilla's and add cheese.

Either way you eat it, enjoy it with your best friend as we do!
