SWISS APPLE PIE 
1 (9 inch) unbaked pie shell

Wash with slightly beaten egg white.

Place 3 cups thinly sliced apples in pie shell. Sprinkle with juice of 1/2 lemon and 1/3 cup white sugar and a dash of ginger. Bake at 400 for 15 minutes.

In the meantime prepare the following: Blend 1 cup scalded evaporated milk and 1 cup grated mild Cheddar cheese. Add 1/8 tsp. salt and 2 slightly beaten eggs. Pour over the apples.
