ITALIAN RICOTTA COOKIES 
3 eggs
2 c. sugar
1/2 lb. butter
4 c. flour
2 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
1 lb. ricotta cheese

Heat oven to 350 degrees. Melt butter. Mix all ingredients with your hands in a large bowl, then gradually work in ricotta cheese. Place 1 tablespoon of mixture for each cookie on ungreased cookie sheet and bake for 15 minutes or until light brown on bottom of cookie. Frost with desired cake frosting.

Very very tasty. I had a pound of left over ricotta and I was looking for something simple to do with it (I'm still in a college dorm, so I can't get all master chef on it). This was the perfect recipe to use it up! The cookies come out light and fluffy, and a bit spongy, which adds more fun! I tried them with frosting, but I definitely prefer them plain, just as they are! Will be making these again in the future.

One of my favorite recipes I make at Christmas. So simple and you get a lot of cookies with it. I especially like them with a simple milk/powdered sugar glaze and sprinkles. It can handle the sweetness because these aren't overly sweet at all. Love them!
