“RICOTTA CHEESE COOKIES” IS IN:

RICOTTA CHEESE COOKIES 
2 cups sugar
1 cup butter
1 (15 oz) container ricotta cheese
2 tsp. vanilla extract
4 cups flour
2 tbsp. baking powder
1 tsp. salt

Mix sugar and butter until blended. Then add ricotta cheese and vanilla extract. Mix in flour, baking powder, and salt.

Drop by the tablespoon onto a greased or parchment-lined cookie sheet.

Bake 12-15 minutes. Cookies will be soft - do not over bake. Remove from oven and cool on a wire-rack before frosting.

Frosting:

1 1/2 cups confectioners' sugar
a few drops vanilla extract
2 to 3 tbsp. milk

Mix together; add more sugar or milk as needed to achieve the correct consistency for frosting.
