MARY'S RICOTTA CHEESE CHOCOLATE
CHIP COOKIES
 
4 c. flour
1 lb. Ricotta cheese
3 eggs
1/2 c. butter
1 3/4 c. sugar
2 tsp. vanilla
1 1/2 tsp. baking soda
1 bag chocolate chips

Mix flour and baking soda. Mix and cream sugar and butter. Beat 3 eggs and add to sugar mixture. Add Ricotta cheese and then flour mixture. Add vanilla, then chips. Bake at 400 degrees 10 to 12 minutes.

These were very good, but definitely not your conventional chocolate chip cookie. They were very light (both in texture and color), moist and not too sweet. They have a cake-like texture. They puff up and do not spread at all. My husband said they were like eating a chocolate chip muffin. I would have given them 5 stars, except my husband didn't like them. But, my kids & I (and my neighbor's teenage son) enjoyed them. If you're looking for something a bit different, definitely give these a try!!

This recipe is delish! Used sugar sprinkles and frosting for children's taste. Made a bunch about 4 doz. small cookies.
