GIANFELICE'S GREAT RICOTTA
CHEESE COOKIES
 
1 cup (2 sticks) butter
2 cups sugar
2 eggs
1 lb. Ricotta whole milk cheese
2 tsp. vanilla
4 cups all-purpose flour (sift first, then measure)
1 tsp. baking powder
1 tsp. baking soda

Cream butter, adding sugar gradually. Add eggs, one at a time. Add Ricotta cheese and vanilla. Beat for 1 minute.

Sift flour, baking powder and baking soda. Add to other ingredients. Blend well by hand. Chill 2 hours or overnight. Form into balls.

Bake at 350°F for 10 to 12 minutes.

ICING:

1 1/2 cups powdered sugar
3 to 4 tbsp. milk
1/2 tsp. vanilla
food coloring (optional)

Stir in milk until icing spreads smoothly. Add a few drops of food coloring if desired. Ice cookies when cool.

I have a very similiar recipe. I just use 1 cup less sugar and no baking powder, but add 2 tsp. salt. I now make both recipes and they are 1 hour from beginning to clean up! I make a batch if company is coming since most ingredients are in the house and they are always a rave!
