“JIFFY CORN PUDDING” IS IN:

JIFFY CORN PUDDING 
1 can whole kernel corn, drained
1 can cream corn
1/2 cup (1 stick) butter
8 oz. dairy sour cream
1 box Jiffy corn bread mix

Melt butter in dish. Put in corn and cream. Mix together well. Sprinkle corn bread mix over corn and stir all together. Bake 45 minutes at 350°F.

I add chopped onion [sometimes green ] and chopped green pepper to this and WE love it. I have not added egg before , but I will the next time as I too thought I'd read or seen a recipe with an egg added .

You could probably use a plain yogurt instead of sour cream or mayo. Not sure it would taste as good, I have never tried it. But I know when I make chocolate cake all three can substitute each other.

Fry up some bacon slices not too crisp, cool and pat off excess grease. Cut into 1/2 inch pieces add too above mixture.. MMM MMMM GOOD

A CROWD-PLEASER: When I take this corn pudding to a group dinner,I also take copies of the recipe -- because more than one person inevitably asks for it. I always make an extra dish to split between home and my mother-in-law. The elderly people in my life, particularly those who eat less or no meat at this point in their lives, particularly love this dish. So do my grandchildren. And I love it too, even though I previously ate corn only when it was fresh and on the cob.

My family loves this with the following additions:

1 egg
1 cup of shredded cheese (they like sharp cheddar the best)
1 can of Ro-tel, undrained

There are rarely any leftovers, but when there are, they are wonderful the next day...

I love this recipe - my son's favorite. I always add 1 tbsp. of sugar. (as I do with any cornbread recipe). otherwise all this variations work well - you can hardly mess up this recipe. :)

The first time I made this I was newly married, and it was my X's grandmothers recipe. well I also followed the direction on the back of the Jiffy box, adding the egg and milk. WELL... my version was a hit! everyone loved it and its been over 20 years ago. I am always asked to make this whenever I have to bring a dish!
