| QUICK LOAF CAKE OR CUPCAKES | |

2 c. self rising flour 1/2 c. butter 1 c. sugar 2 eggs 2/3 c. milk 1 tsp. vanilla flavoring Cream sugar, butter, and eggs. Add flour and milk. Mix at medium speed about 5 minutes. Add flavorings. Pour into any size loaf pan (mine is 9 x 5 x 2 inches). Bake at 350 degrees for 20 minutes. Serve sliced. Top with strawberries and whip cream. This is also great when your child comes home the day before Valentine's Day and says he need 2 dozen cupcakes for the class party! You will need to buy cupcake paper cups. Spoon in about 1 tablespoon batter and bake at 350 degrees for 10 minutes. Let cool, decorate with frosting and candy hearts. | |

This cake has a good flavor and is easy to bake; however, the baking time for the cake should be 50 to 60 minutes. The bake time shown is actually for cupcakes. I checked the cake after 20 minutes and it had risen but was not near done. I ended up with a fallen cake.
