RICH CHOCOLATE LOAF CAKE 
1 1/2 c. softened butter
2 1/2 c. sugar
2 tsp. vanilla
5 lg. eggs
2 tsp. instant coffee
1/4 c. hot water
2 c. all-purpose flour
3/4 c. cocoa
1 tsp. salt
1/2 tsp. baking powder
1 c. buttermilk
1 c. semi-sweet miniature chocolate chips

In a large bowl, cream butter, sugar and vanilla; add eggs, one at a time, beating well after each addition; scrape bowl frequently. Dissolve coffee in hot water. Stir together flour, cocoa, salt and baking powder; add alternately with coffee and buttermilk to creamed mixture, beating until mixture is blended, add chocolate chips and stir well.

Divide batter equally between 2 well-greased 9x5 inch loaf pans. Bake in a preheated 350 degree oven, 60 to 65 minutes or until tester comes clean. Cool 10 minutes; remove from pans to wire rack. Serve plain or with a scoop of ice cream.

This recipe was a big hit with my family and friends. I had a similar recipe years ago but I lost it. I was quite pleased to find this one. I only made one change: I added 2 cups of chocolate chips (one for each loaf). I served it warm with vanilla ice cream. It was delish! Thank you so much! : )
