AUNT BERTHA'S BANANA LOAF CAKE 
3 1/2 c. sifted cake flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla
1 c. shortening
2 c. sugar
4 eggs
2 c. mashed bananas (4 or 5)

Grease and flour a 10-inch tube pan, or line with paper, if desired. Combine and sift together 3 times: flour, soda and salt. Cream shortening with sugar and vanilla. Add eggs, one at a time, beating thoroughly after each addition. Add the mashed bananas alternately with the flour. Bake at 325 degrees for an hour or until done.
