LAMB CHOPS WITH MINT BUTTER 
2 tbsp. fresh mint leaves or 1 tsp. dried
4 oz. unsalted butter, softened
1/4 tsp. salt
Freshly ground black pepper to taste
1 tsp. lemon juice
4 loin lamb chops, 1 1/2" thick

1. In food processor fitted with steel blade, chop mint very fine. Add butter, salt, pepper and lemon juice; process until very smooth. NOTE: Mint butter may be prepared ahead and refrigerated.

2. With sharp knife, score chops on both sides; coat with mint butter; let stand 30 to 40 minutes.

3. Broil chops in preheated broiler 8 to 10 minutes, turning at least twice; serve directly from broiler on individual plates.
