SPINACH AND KIWI SALAD 
3 c. spinach
1 c. mustard greens or any tart crisp green
2 c. red leaf lettuce
Large ripe kiwi
Small red onion
3 tbsp. safflower oil
2 tbsp. honey (approx.)
Juice of 1 lemon
1 clove garlic, peeled & cut into slivers
Salt & freshly ground white pepper

1. Remove stems from spinach and mustard greens and discard. Wash spinach, greens and lettuce and dry in salad spinner or pat dry with paper towels. Tear into bite size pieces. Place greens in salad bowl, cover with plastic wrap and refrigerate.

2. Peel and slice kiwi.

3. Peel onion and cut into thin slices.

4. Place kiwi and onion slices on small plate, cover with plastic wrap and refrigerate.

5. In small bowl, combine remaining ingredients and whisk until blended. Set aside until ready to serve salad. Remove garlic just before tossing greens with dressing.

6. Toss greens with dressing. Divide among individual salad bowls and garnish with kiwi and red onion.
